I have been trying to do this in the longest time and the best i have done so far is a one gold star and i have only done that once. Anyone have one this and can tell me the best place to try, I am using the Kenshin pimped all the way.

ok i managed to crack how to do this perfectly so listen carefully. Holding handbrake when doing a stoppie seems to prevent you from tipping the bike over whilst braking allows you to to tip the bike over so you have to use a combination of the two in order to get three gold stars.
1. Get as much speed as possible (this is best done on the airstrip in the bottom left of the map)
2. Hold X (handbrake) and up on the stick untill you get 3 bronze stars
3 As you get the third star quickly press the left trigger and tap up on the stick
4 Now quickly hold X again whilst holding up on the stick
5 Turn left followed by right alternating between the two about every half a second to a second this should make you go in horizontal directions
I use control style B when driving so you might wana make the neccessary changes if it helps you.
